The Palo Cortados are among the most special wines within the Jerez-X\u00e8r\u00e9s-Sherry Denomination of Origin. Despite undergoing the physical-chemical oxidative ageing process used for oloroso wines, the resulting product is not an oloroso, and in fact, its special organoleptic characteristics makes it seem like somewhat of a cross between an oloroso and an amontillado.
