Dirk Niepoort, a key figure in the wine world, visited our home in Sanlúcar with a clear objective: to explore a collaboration to create a new Manzanilla. He was welcomed by Montserrat Molina. No one knows more about Manzanilla than she does. Montse walks the streets with such deep respect that she seems like a true Sanluqueña. Not even her Catalan accent distances her from the Sanlúcar flor veil.
Dirk’s interest in biological aging led him to explore the winery, searching for barrels that aligned with his vision. The connection with Montse was immediate, and together they tasted a wide selection of samples until they found the perfect combination.
The result of this collaboration is a limited production that reflects the union of expertise, respect for tradition, and a renewed approach to the aging of this unique wine.
