The Palo Cortados are among the most special wines within the Jerez-Xèrés-Sherry Denomination of Origin. Despite undergoing the physical-chemical oxidative ageing process used for oloroso wines, the resulting product is not an oloroso, and in fact, its special organoleptic characteristics makes it seem like somewhat of a cross between an oloroso and an amontillado. Perhaps we could say that our Cortado Obispo Gascón has one foot in biological aging and the other in oxidative aging.
