The Amontillado wines are the most interesting of the Jerez wines. They are firstly aged biologically as a Manzanilla under the velum of flor yeast for 8 years before undergoing a further 7 years of oxidative ageing. Our Amontillado Principe boasts extraordinary nuances, which are the result of this 15 year ageing process.

Well-balanced and structured, leaving a long after-taste. We can appreciate the typical dryness of the amontillado wines that makes them all the more complex. Good after-taste.
